Friday night salad

I picked up a zucchini on my way home tonight for $.64. I will use it tomorrow in some pasta sauce, which if everything goes as planned, I will have cooking in the crock pot all day and will be ready when I get home. I also checked both locations of QFC for the tuna they have on sale this week for $.50 a can, and neither store has it. Grumble grumble. We gave our last two cans to the cats.

Winter stayed home again today, but as of tonight she is doing much better. She should be fine by Monday and back at school.

Breakfast: nectarine (planned to have a yogurt also, but got too busy, so it was a mid morning snack)
Lunch: leftover pinto beans with tomatoes and peppers, topped with shredded pepper jack cheese, and a black plum
Dinner: salad with green lettuce, quinoa, honeycrisp apples, slivered almonds, celery, grilled chicken, and raspberry vinaigrette dressing
Snacks/desserts: strawberry flavored Greek yogurt, oatmeal cookies
Beverages: water

Winter had her salad without almonds, and used zesty herb dressing. She said mine tasted like a dessert salad. Whatever, little girl.

Jeremy will have his "salad" when he gets home from the gym. It will just have chicken and quinoa, because vegetables are ebil.

On Thursdays we eat lunch for free

Well, not really, but Jeremy and I both had work meetings yesterday which included free lunch at a restaurant, which is always cool. Winter finally succumbed the the cold everyone else has already had and stayed home from school. She made a can of potato soup for lunch. Jeremy got a Santa Fe chicken wrap, and I had a cheeseburger with a cup of baked potato soup on the side. We did not buy any food yesterday.

Breakfast: pumpkin flavored Greek yogurt, plum
Lunch: cheeseburger, baked potato soup
Dinner: pearl couscous with turkey sausage, green bell pepper, and parmesan

Wednesday grocery shopping

We went to Grocery Outlet on Wednesday afternoon. I was feeling much better from the cold but not quite 100%. Here's what we bought:

When I got home I made a large pot of potato broccoli and cheese soup. We ate some for dinner, and froze the remaining soup, which was about 14 cups. Later that evening Winter and I made a batch of oatmeal cookies using this recipe and we used white chocolate chips and cashews for the nuts. They turned out really well. If I made them again I might reduce the sugar a little, because white chocolate chips are very very sweet. We'll eat those cookies first, and wait to open the Chips Ahoy we bought.

Potato broccoli and cheese soup recipe


10 plus 1/2 cups water
3 T sodium free chicken bouillon (if you use regular bouillon omit the salt)
1 T garlic
1 t red pepper flakes
1/2 t paprika
1 T salt
3 large Yukon gold potatoes, peeled and chopped
2 heads of broccoli, chopped
1 carrot, cut into matchsticks
1/2 cup corn starch
2 cups half and half
6 oz shredded cheese (we used half smoked gouda and half hot pepper jack cheese)

Mix 10 cups water and all seasonings together in a large stock pot and cook on high heat until bouillon is well incorporated. Add potatoes and cook for about three to five minutes at a rolling boil. Mix the corn starch with the 1/2 cup of water and blend until smooth. Add mixture to pot and stir. Add broccoli and carrots. Reduce heat to medium high and simmer until the soup has thickened and the vegetables are tender. Turn off heat. Add half and half and stir. Add shredded cheese and stir until cheese is fully melted.

This recipe makes about 12 1.5 cup servings. Nutrition info is for one serving.





Siiiiiiiick

Yesterday I woke up with a bad head cold. I suspected on Monday evening it was coming on. I had to call in sick to work. Even if I could have taken enough medicine to get rid of the symptoms, I would be passing the virus to my coworkers and clients, which is bad. I did not have much of an appetite all day.

After Jeremy got home we had to run to the store to pick up sour cream for dinner, and a few other things. What we bought:

Monday- take your parents to school day!

This week at Winter's school they are doing a Take Your Parents To School week for Freshmen. Apparently there weren't a lot of takers because I was the only parent in each of her classes, and I only saw one other mom in the hallways. It may also be partly because three of her six classes are sophomore or junior level (although there are other freshmen in those classes too).

Jeremy had a dentist appointment that morning to get his two front teeth built up (they have both been chipped for a really long time) so he didn't go.

Although most days I get up to pack Winter's lunch before she leaves for school, I often go back to bed for an hour or two afterward. It was a little bit of a challenge getting up and staying up at 6:30 am. I was surprised how quickly the day went. And how much technology has been integrated into the classroom. Everything is done online now, and students have access to all grades, handouts, and assignments through an online portal now for most classes.

First period was Honors World History where they went to the library to research various ancient civilizations in groups. Second period was Honors Lit where they discussed the Ferguson situation and journaled about it. Third was Health where they talked about macro and micro nutrients and what makes food choices healthier vs. less healthy. Fourth period was Honors Geometry, where they reviewed questions from the previous weeks' test and student demonstrated how they got the answers on the white board.

After fourth period we had a 30 minute break for lunch. We sat in the hallway with one of her friends to eat. Fifth period was Honors Biology, where they were learning about molecule structures. They also got back the previous week's test which Winter got 100% on. Sixth period was Spanish 3 where they talked about the homecoming dance and how to say different things about it in Spanish, and then they finished up a test from the previous week and worked on a worksheet packet.

On our way home we stopped by a little grocery store that is on the way back from her bus stop called The Stockbox. Most of their packaged items are more expensive than at QFC, but they often have good deals on produce, and they also have 10% off during their produce happy hour in the afternoon.

We bought the following:

We got $.55 cents off for produce happy hour and the total was $6.88

Jeremy also bought an energy drink for $1.10 that afternoon. He went to the heavy lifting gym at 4:30 and did squats for two hours. He had a smoothie for lunch since he still couldn't feel his face, and some grilled chicken with sriracha for breakfast.

Breakfast: skipped
Lunch: pepperoni and cheddar cheese sandwich with Dijon, apple, lemon flavored Greek yogurt, protein bar (was going to be my breakfast but I didn't get around to eating it.)
Dinner: stir fried chicken with broccoli, carrots, brown rice and teriyaki sauce
Snacks/desserts: half a granola bar, celery with cream cheese, cashews, strawberry banana yonanas
Beverages: water

Winter's lunch had leftover pizza, a pre-packed pineapple cup, dried cranberries and cashews, and Starburst candy corn. She didn't finish the cranberries and cashews or the candy corn, but she did finish the candy corn at home. For breakfast she had cereal and milk.

Out for dinner on Sunday

On Sunday we decided to try our a pizza place in Capitol Hill that I had a coupon for, called Z Pizza. The coupon was buy one pizza get one free. They also have take and bake options, which are cheaper than dining in, but we haven't gone out to eat in a while, so we decided to eat there. We got two small pizzas, one with bell peppers and double black olives, and one with pepperoni, bell peppers and mushrooms. Winter and I both got sodas, and Jeremy had water. The total after the coupon, tax, and tip was $18.55. There were two slices left, which we took home and Winter took to school for lunch on Monday.

Afterward we went to Yogurtland to try out the new fall flavors. Right now they have pumpkin pie and rocket pop sorbet. I tried both of them, but decided to go with root beer float yogurt topped with gummy cola bottles. Winter got the same. Jeremy got the rocket pop sorbet with no toppings. We had a free 3 oz reward we used so the total was $6.48, but we also paid with a gift card which I got for 10% off on Raise.com, so the actual amount spent was about $5.83.

We also stopped by QFC on they way home. Here's what we bought:

Saturday happenings

Saturday was pretty average. No grocery shopping other than the Marie Callender bacon and egg pot pie I got from QFC' s Free Friday Download promotion. Winter has it for breakfast Sunday and said it was good.
