Wednesday

Yesterday I had my first acupuncture appointment ever. I went to The Pincushion in Capitol Hill. They have a siding scale based on income of $20-40 per treatment. I had a horrible headache when I woke up though, so I stopped for an iced coffee on my way there, which was $2.14. This was not the best idea because I had to use the bathroom really badly about 40 minutes into it, so we had to cut it a bit short. I felt the needles as they went in, but couldn't feel most of them after a few seconds. I'm going back next Monday. I'll give it a few weeks and see how it goes.

I also went to Goodwill. I am hard on my clothes so I try not to spend too much on them. I got three tops, two pairs of pants, and a dress. I also found a dress for Winter for homecoming for $9.99.

Winter stayed after school to try out for the fall play. She says they will email who got which parts, but she is not sure when.

For dinner I made chicken stir fry with broccoli, carrots, and brown rice, and made a sauce out of plum preserves, ginger, rice vinegar, and sesame oil. It tasted a lot like sweet and sour sauce, just not bright red in color.

Breakfast: English muffin with raspberry jam
Lunch: pepperoni soup
Dinner: chicken and veggie stir fry with brown rice and tangy ginger plum sauce
Snacks/desserts: mango Yonanas
Beverages: iced coffee with half and half, water

Pepperoni Soup Recipe

for real this time

14 oz can of petite diced tomatoes
14 oz can tomato sauce
2.25 oz pepperoni cut into bite sized pieces
1 large zucchini (You can chop it up or grate it. I grated it because Winter does not enjoy the texture of zucchini, but found it to be fine once grated up.)
3 oz red wine
1 T olive oil
1/2 T garlic
1/2 T Italian seasoning
pinch of red pepper flakes
6 oz dry pasta
6 cups water

Combine all ingredients except for pasta in a large stock pot. Bring to a boil, then add pasta. Stir occasionally until pasta is tender. Makes about 10 cups of soup. Nutrition info is for 1 cup. You can reduce the amount of sodium by using canned tomatoes with no salt added.Garnish with some parmesan cheese if you like.


 

Tuesday

Yesterday was a day off for me. I slept in late and got very little done. I did make a quick run to the grocery store, where I found out why we got charged $2.00 for the last box of protein bars we bought, instead of $1.00 like usual. Apparently they are currently on sale for $2.00 but if you buy five participating items you get another $5.00 off your total. So this time I bought two boxes of protein bars, two canisters of Crystal Light, and one package of English muffins, all of which were included in the get $5 off promotion.

What I bought:

I made pepperoni soup for dinner and it actually turned out like soup. The recipe is pretty close to the first time I tried to make it in the crock pot, but it has a lot more water this time. It turned out good. I'd definitely make it again.

Lunch: leftover curried chicken and chickpeas, protein bar
Dinner: pepperoni soup
Snacks/desserts: lemon flavored muddy buddies, chocolate pudding cup
Beverages: water

Winter overslept and had a cereal bar for breakfast on the bus. She took some cashews, dried cranberries, and a granola bar for lunch.

Monday

I worked fairly late yesterday so Jeremy and Winter went to Subway for dinner. They spent around $18.50 and brought me back a cookie. I didn't have to get up early so I lounged around in bed too long and skipped breakfast. I was on my sixth straight day of work, and only got one day off last week so I am dragging pretty bad. I have Tuesday AND Wednesday off this week. Hopefully that will help me recharge some.

We got two of the bills in for Jeremy's fistula graft surgery. One is about $800 and the other is $2500. We should be pretty close to the $4000 out of pocket maximum now, if we haven't already hit it.

Breakfast: skipped
Lunch: dark chocolate Cheerios and milk
Dinner: bagel sandwich with salami, pepperoni, cheddar, lettuce and Dijon mustard and an apple
Snacks/desserts: chocolate pudding cup, cookie from Subway
Beverages: water

Yesterday was pretty uneventful. I had a busy day at work. Jeremy made dinner.

Snacks/desserts: cashews, chocolate ice cream with goat milk caramel sauce, protein bar

Saturday

Yesterday we went out for frozen yogurt after dinner. We used a gift card purchased for 10% off on Raise.com, so the total spent after that was $13.23. We also stopped by QFC to look for the free Friday download item, which we did not find, but we also hit up the reduced for quick sale section of the frozen aisle. We found a turkey and stuffing Lean Cuisine for $1.09, a carton of chocolate ice cream for $.89, a Lean Cuisine salad kit for $.59 and a 4 pack of Smart Ones peanut butter cup sundaes for $.99 for a total spent of $3.56.

I used the last two leftover taco shells to make some chicken taco salad for dinner. Winter skipped the cheese and dressing, and Jeremy skipped the tomatoes. We used the Taco Bell spicy ranch sauce we found for $.47 as dressing.

Breakfast: sourdough French bread
Lunch: coffee flavored Greek yogurt, cashews, apple, grapes, chocolate pudding cup
Dinner: salad with lettuce, grilled chicken, tomatoes, cheese, crushed up taco shells, and spicy ranch dressing
Snacks/desserts: watermelon sugar cookie, frozen yogurt
Beverages: water

I have no idea what Jeremy and Winter had for breakfast and lunch yesterday.
